Hello! Here is a typical hood design. As I understand it, you want to replace the standard multi-position speed selector with a regular switch, so that only a low speed is turned on, right? Are these three wires sticking out of the wall from the hood, or is white also related to it? Which switch was before, do you remember how it was connected?

In general, you need to find a wire to which if you apply a phase, a slow speed will start. Insulate the remaining wires. If you look at the attached circuit, it shows a hood with a three-speed engine, if you only need a slow speed, then the switch (toggle switch) is placed between the phase (let purple be the phase) and wire number 1 (herethe black).

You can start your search in another way. The following figure conditionally depicts a multi-speed engine similar to a hood (except perhaps a circuit with a conventional fan). Here it is shown that the wire (GREEN) that is responsible for the "maximum" will show less resistance relative to the "zero" wire. A small speed will have more resistance (RED).
